I don't think you should. Instead, edit the file and change stable for buster, then try updating again.

Thanks Tolkem. The fix was indeed changing every "stable" to "buster" (there was more than one repo asking for it). This is what my sources.list looks like now, for anyone planning on sticking to Centaurus for the foreseeable future:
