Stick with Stable 7.0 (winehq-stable) unless you are prepared for a few bumps along the way.

I mean can I have the Pastebin link for the instructions of how to install Wine 7.2 on Q4OS Trinity so I can copy and paste the commands on terminal?

There you'll find the command to import the repo key - you do get a message saying apt-key is deprecated but it works fine
You copy and paste the relevant section from the sources info into either /etc/apt/sources.list or you create a new file wine.list in /etc/apt/sources.list.d
Either is correct but the latter is preferred.
You then follow the instructions to install the version you require - in your case you are looking at the development version.
I feel it only fair to mention that the wine vms created by 7.2 are huge. Just checked and with no software installed they come out at 1.2gb
